Preparation

  1. Whisk together eggs, butter, vanilla, monk fruit, orange zest, and salt.

  2. The next step is to add the almond flour and continue to whisk until smooth.

  3. Add baking soda, whisk in.

  4. Add fruit and nuts. Stir.

  5. Line your loaf pan with parchment paper and then pour batter into the loaf pan.

  6. Bake fruitcake at 350 degrees for 30 minutes.

  7. Take out your fruitcake and let cool before cutting it into slices.

  • 4 Jumbo Eggs

  • 4 Tbsp melted Butter

  • 1 1/2 Tbsp Vanilla

  • ½ Cup Monk Fruit

  • 2 Tbsp Orange Zest

  • ½ tsp Salt

  • 1 ½ Cups Almond Flour

  • ½ tsp Baking Soda

  • ¼ cup dried Cranberries

  • ¼ cup dried Cherries

  • ½ cup Pecans

  • ½ cup Walnuts
